tile grout wrong!
So we went with subway tile, and the contratctor talked me out of using a dark grout. I LOVED the way the tile looked before the grout went on, but now it looks so plainwith white grout! Anybody have an idea of how to darken grout or regrout somehow?

Yes, grout stain is a popular option. Removing the grout will not be fun, easy, or inexpensive. I would try a grout stain just to see if you like it. Very little effort and the results might be to your liking. Do a small test area to see how it looks.

Can’t say whether it works or not.
But certainly easier and cheaper than removing the grout by hand.
I would take some really, really strong tea or coffee and use it as a stain to color the porous grout. It will make the grout darker, but not the ceramic tile. then, after you have the desired effect, just wipe the tiles clean with a damp sponge. Of course try a little corner first to see if you like the effect. If not, you can always bleach to get back to the white.
*I would brew 3-4 tea black tea bags in a quart of water.
To answer your question the only way to change the color now is to remove the white grout. I always use another color other than white because when it gets birty it can be a headache to clean
