Options for finishing the Zebra Wood Countertop

I recently installed a zebrawood countertop in my kitchen. I would like to basically waterproof it. I know that I have options of oil vs. poly. However, I would like to have a very natural finish, not shiny. Also, I’m unsure of what kind of oil is best, and of the process. Can someone enlighten me.
Absolutely DO NOT us water based poly on a zebrawood countertop. Use a mineral-based marine grade wood oil. See “Brooks Custom” wood countertops for care information from the professionals.
Zebra wood in a kitchen, that’s interesting. Are you going to prep food on it? I ask because I would be concern of what ever oil finish you use tansfering to the food. Minerial oil is safe to use with food. A very traditional choice.
It is the real thing. Not veneer. What waterbased poly is good. Is it possible to apply in a hand rub finish? to avoid brush marks? How is this done? Is this a job only for the professionals?

The exotic woods tend to like water based poly. Is the zebra wood a veneer? Did the millsmith use glue to attach the veneer? If the answer is Yes – then I would use water based poly.
