I recently used Vin Roy Baronette of Park Slope Brownstone 646 554-4513 on the rec of several on this site. I also googled him and found a rec for him as the person who worked for This Old House in Prospect Heights.
I found him responsive by phone (he does NOT text) and very easy to deal with. Good job at a reasonable price - half of what the other company I called quoted, AND he pulled a city permit for the work. I'm just outside the landmark area, with slate sidewalks.

Mos def NOT reasonable to expect the floor sander to work on the doors - it's really different equipment. Why don't you wait and see if they really look so bad with the new stain?
I had my doors "dipped" by a place in Staten Island. They picked up painted doors, dropped off raw sanded doors, and I did steel wool/stain/varnish.
If you've got nice old doors, I think it's a waste to hide them under paint....

I had mine done a couple years ago by a guy named Davidson, who was recommended by the window guy at Dykes Lumber.
It was parlor floor, so extra tall windows that would be $$$ to replace, plus I was into keeping the originals instead of adding to a landfill somewhere...
He put in vinyl strips in the sides for insulation, and I got to keep the wood windows.

Make sure your guys use an orbital or palm sander to 120 grit. If the door is in good shape should be easy. If you've got good wood under there, maybe run a test with oil on a small area before you paint it. You may like the results. If not, put on some primer, sand and then get some good oil paint and an experienced finisher.

I found him pretty responsive by phone (he does NOT text) and very easy to deal with.
