Amp for a 4 family brownstone

We are currently renovating two apartments in a brownstone. In both apartments we plan on renovating the kitchen (including modern appliances such as dishwasher, gas range, new refrigerator) and bath as a result our contractor suggested we upgrade from the existing 40amps to 60amp or 100 amps. Is this necessary to perform increase the amps per apartment and if so how much should we expect to pay? Thanks.
