prefinished or site finished

I’m having trouble deciding between prefinished & site finished wood floor for my kitchen. One contractor says he will never install prefinished again, the other strongly prefers it. I’ve only seen one prefinished floor installed and it looked pretty weird — shiny & fake. Do they all look that way?
