Do any of you bake bread at home??? I made my first attempt at it using the overnight "starter method" to make a ciabatta.
The dough was very hard to work with and I think my bowl was too small and it didn't rise as much as it should have at the stage after I added the flour.
Although the loaf baked properly and achieved that "hollow sound" when you tapped it, the inside was a bit dense and tasted a bit undercooked.
Any tips from you bakers?? Like other things in life, I will do it over and over again until I get it right.

Dibs - Weather has an impact on bread. Is your kitchen air conditioned? If not, density of eggs & butter can be different from the optimal. Also the effect of yeast is altered by heat & humidity can affect the "rest" period.

Dibs - Try making a challah w/o eggs. Also, freeze your flour for 2 weeks before storing it long-term or you'll get weevils.

DIBS - i make focaccia. was the dough really sticky? sometimes that happens to me, then i can't get it properly evenly spread out onto the sheet and it doesn't rise the second time properly. also, since it's only yeast, flour, salt and oil, the prime suspect would be yeast. Was the water the right temp?

This weekend, while on line in a convenience store, I came to realize that the price of a Sunday NYT is now a whopping $5. Are they kidding or what? Are they trying to hasten their decline?
Of course, this is the same paper that will rail against price-gouging by other industries. What a joke. I haven't purchased a NYT in perhaps 7 years, and shed not a tear for them.

I feel the same way about the times. I can't believe it's up to $5. I buy it maybe 1 every 6 weeks when I really want to have a lazy sunday and just read every single section with Breakfast, otherwise I am online on Saturday mornings doing a quick run through!

Nothing like a good roast beef on a Zabar's rye with the black sesame seeds on the crust and old fashioned deli mustard. Sour pickles on the side.
Bx is right, challah makes great french toast (that's eggy bread, etson), particularly if it is slightly stale.

Since the US is headed towards third world status, I see an opportunity here. In places like Ho Chi Minh City and elsewhere, kids make money by reselling used papers at a fraction of the newsstand price.

hahahaha of course not gemini! im just saying, if you dont wanna pay 5 bux, they are all over the street in the morning. i read my roommate's paper when he's done. most of the paper is gag-worthy tho, specifically the real estate section, i dont know why i bother reading it. it just makes me feel schizoid about myself. like im the biggest loser EVER and that omg i am SO glad im not like the people featured in that section of times.

Arkady, when the starter recipe calls for milk, does it make a difference if it is whole or skim????
A ciabatta is a very, very wet dough and I may have added too much flower at the end and handled it improperly.

I wasn't commenting on your taste in sandwiches so much as concurring in why you wouldn't know who eats challah.
I don't keep kosher, and have no problem with ham and mayo (on a hero, or 7 grain, etc.). But something in my cultural sensibilities is offended by putting this combo on rye. I either go yid or goy on my sandwiches, but rarely mix up the two.

The apt comparison is not to Fox News, but to the Wall St. Journal. I have noticed that in the past three or four years serious thinkers on the left (guys like Robert Reich, Paul Kennedy, Alan Blinder and Larry Summers) write their essays in the op-ed pages of the WSJ, as do serious thinkers on the right. In both cases, serious, reasoned proposals are put forth, with little invective or cycnicism.
The op-ed pages of the NYT has been turned over to snarksters (Maureen Dowd),cycnics (Frank Rich) or fear-mongerers (Paul Krugman).
A serious question: can someone really point to a serious polemic that has been written in the NYT in the recent past?

I'm glad everyone had a good time on the tour, I had fun doing it. It was great sharing my neighborhood with appreciative people, and always great to get together with some of the Brownstoner gang. I'm so glad it didn't rain, too. I also enjoyed our meal at Tavern, they are great folks, and they have a great chef.
Snappy, I'm glad Mr. Tid is adjusting so well. I miss him too. The photos are really cute. He looks just like his Uncle Angus when he was a wee kit.

DIBS--Have you tried the famous incredibly simple no-knead bread recipe from Mark Bittman/Jim Lahey? I had success on the first try, and got even better at it with time. This warm weather is good for breadmaking, IMO. Here's the link:

good morning everyone.
Bread also figured in my weekend--but it was made by someone else, namely the Muslim Uzbeks at the fabulous Cafe Kashgar in Brighton Beach.
This is one of my favorite New York restaurants. I dream of this place when I'm in Hong Kong. The Uzbek Muslim food is like a halfway house between Chinese and Middle Eastern food.
Anyway, the bread they serve comes in big flat rounds, it's got a soft crust and is dense inside. It is great for dipping into their lamb broth soups. Also for sopping up the vodka, which these Uzbek muslims so graciously allow their non-halal customers to bring into the joint.

In other news.....
I was blown away this weekend when I went to see my daughter's new apartment this weekend. She rooms with my cousin's daughter, and they were previously renting a 2-bedroom in Carroll Gardens West (Columbia St.) that was a complete dump. The only thing that it had going for it was a sentimental purpose, as it was a stone's throw from where my grandmother used to live.
They took advantage of the weak market and moved to a 2-bedroom in Greenwood Heights that is a HUGE difference. The owner completely gut-renovated the place: new walls, new kitchen, new bathroom and new wiring. The rent is only $25 more than they were paying in the previous dump. She is only 2 blocks from the subway now, as opposed to the trek she had before.
I was proud that my daughter hit a home run like this. More impressive to me was that the broker she used (Rapid Realty) charges the landlord the fee.

benson- I like Maureen Dowd but consider her a social commentator. the WSJ is a creditable paper- I'm not denying it. But plenty of serious journalists do write for the Times. I happen to like Krugman and Rich- they don't snark. I love Bob Herbert, whose column I have read for years. I also read David Brooks. I notice that when you don't agree with a writer you label them (cynic, fearmonger). Once you do that, you automatically prejudge so there is no objectivity. I've read plenty of biased journalism on the WSJ website too. They all do it.

I second Tacis Beyti. Amazing grilled eggplant. Everything was really tasty there. But yes, real Turkish, not anything further east on the silk road.

Speaking of Fukienese....
I have a great review of Yamato Restaurant on 7th Ave. The service was excellent. The food was very good. As appetizers we had the pickles, a raw abalone special and a very nice, sweet hot eggplant dish.
We had sushi a la carte and the fish was extremely fresh and the pieces were LARGE. Unlike many Brooklyn sushi restaurants, they always have Toro and Bonito. The toro was $7.00 a piece and melted in your mouth. Sake was $18 per 250 ml.
Now the more interesting part....I went with my Chinese bf and he's from Fujian. I knew that the staff was Chinese but he told me that the three sushi chefs were Fukienese. The one directly in front of me was gorgeous with those almond shaped eyes that slanted at about 22 degrees and wondeful full epicanthal folds...a rice queen's dream.
There was also a very nice waiter from Bhuttan.

I agree with virtually nothing that Robert Reich proposes, nor do I agree with much of anything the other writers I mentioned propose(Blinder, Summers and Kennedy). Yet I have enormous respect for all of them, and would never label them a cynic or a snarkster.
Bob Herbert is a decent guy as is David Brooks. Frank Rich, Maureen Dowd and Krugman are what I previously labelled them.

Snappy, Fukienese reference is for the food style of a chinese province that is directly across from Taiwan. if you venture into Man Chinatown, the loud aggressive sounding Chinese people you hear are from that province. BTW, if not for these people, Chinatown would've disappeared cause Cantonese people here are pretty weak and no impact considering they've been in this country since they days of laying railroad tracks to the West coast.

dibs, my fave sushi in my nabe is Taro Sushi on Dean St near Flatbush, which also has a support staff of Fukienese sushi chefs (under the supervision of the head guy, who's from Tokyo). Go between Thursday and Saturday, when the boss is around, and order omakase or one of the specials. It is as good as any neighborhood joint in Tokyo, the real deal.
Seems like many of the sushi places in Brooklyn are manned by either Mexicans or Fujianese....

After having read many of Krugman's books in grad school (where many of my professors were lefties) I can understand why many see him as a red communist. People seem to welcome or worry about it depending on the time of day, the issue the subject. Last week seniors were howling down town hall health care reform meetings, yelling "keep government out of my health care"- where the hell do they think medicare comes from? the man in the moon? The people on wholeheartedly embraced Homeland Security- and still do, despite the big hand of government on our civil rights? The religious Right who wants the government to legislate our social mores? It would be great if we could agree on just what we all mean by big government.

The seniors and their medicare at the town hall meeting were hilarious. That being said I don't think universal health care plan was thought out enough by the obama team. Either their message is being muddled by the naysayers or the message was muddled from the get go. Me thinks both.

OH!! i wanted to ask, not sure if i should post in the forum or not (sometimes i dont think the forum regulars like me very much, but anyway) does anyone have a wood floor sander!? i really want to sand the floor in my room and redo it. it's kinda nasty. but is it easy to do? how will i know which shine will match the rest of the apartment? since the floor in my room extends into the living room that much. i was reading that there is also chemical strippers you can use if you dont want to use a sander?

Rob, I wouldn't try it (sanding). Normally you need at least two sanders, one for the center of the floor, one for the edging. It definitely requires some skill, multiple grades of sandpaper, and then several coats of poly. You'll have to get all the furniture out of the room for several days. And finally, when you screw it all up, it may be that your landlord won't take kindly to it.
Honestly, If I was gonna try a room, I'd pick up a used 3" or even 4" belt sander off ebay and use that. Less likely to do damage, and you'll definitely get some exercise.

Ultimately to bake bread you have to be consistent, and you need to feel the subtle differences in consistency of the dough induced by humidity, differences in the flour, and so on.
Sometimes people try and take short cuts in sifting, not you, right? And shortcuts in general, they don't work in baking. Cooking you can get away with a lot more than baking.
And I definitely second the recipe that Tina suggested!

A friend of mine just refinished his floor using one of these chemical strippers, and the results are truly amazing. Apparently it is a two-step process. The first step is the application of a chemcial that dissolves the top layer off the old polyurethane. It leaves the bottom layer of the old polyurethane intact. You take off the dissolved goop with a squegge-type mop. Then you apply another layer of poly.
This process does not require a high skill level. As I mentioned above, the results are amazing, given its simplicity. Not as good as a sanding/refinishing, but more than adequate for a rental apartment.
If you want me to find out more info about this process,let me know (name of chemical, where to buy, etc.).

ah nevermind then. for some reason i thought it would be an easy project. i probably shouldnt even attempt to do it anyway since it's a rental. i used to cover my floor with a carpet but i stopped using one and now the scuff marks on the hardwood really irk me!! and when i sit on the floor sometimes i catch myself picking at the scuffs and making it worse! grrrr

I wouldn't tackle sanding, either, and I've done a fair amount of small-time DIY on my place. Very easy to create all kinds of weird marks, grooves and scratches that will be quite noticeable. Pete of Bed-Stuy reno did a pertty good job with his floors, and some posters noticed the marks in the photos.
More importantly, I thought you were renting. You could get yourself in a heap of trouble with the LL if you sand the floors in a rental. Really, LL won't like it even if you do a fab job. Much worse than painting. If you screw it up it could cost a lot to fix (poof, there goes the deposit). Don't mess with your floors unless you own the place. You're better off getting a rug.
Same goes for staining and finishing the floors. I'm a pretty mellow LL with the rental unit in my own house, and I would be freaked out if my tenant started doing all this floor stuff, even if my tenant were Bob Vila.

technical question about window air conditioners. this totally blows since it's already the middle of august but i need a new AC. the one i have now keeps freezing up after an hour or so and then stops air coming in. the filter is clean and stuff. i think it might need a shot of freon. where can i get that (do they still even make that?) i dont want to have to buy a new AC just for another month or so. maybe i'll just tough it out, but when im hot and sweaty i get really cranky and i dont sleep well. plus i sleep on a leather sofa with no sheets so when it's hot and humid it gets all sticky and gross.

Lots of Fujianese working as sushi chefs in Brooklyn. My daughter goes to school with a lot of Fujianese kids and she hears the "Fuji" talk right away when we go to Japanese restaurants (the one on Franklin south of Atlantic (Bergen?); the one where Greene Ave. starts at Fulton). (Not me, I just recently started to hear the difference between Mandarin and Cantonese, which is like saying the difference between English and French!)
DIBS, she thinks they are cute too but she's only 13!

rob - i never installed my a/c bc the apt has been pretty cool. you're welcome to borrow mine for the remainder of the summer. pickup is in carroll gardens. it's 8000btu i think, so good for keeping a room nice and cool.

On the floors, if you just want to spiff them up a bit, there's a great product called Minwax Floor Reviver that you can get at the hardware store for $10 or so, and you put it on with a sponge mop. It won't take out scratches, but it will give the floor a nice sheen and protect it. I would wash the floor first really well and get off any scuffs with fine steel wool and then put on the finish. It lasts for three months or more and is very easy to do.

rob, the coil wouldn't be freezing if your were out of refrigerant. Sounds like you have too much AC for the space. You need a smaller unit. google for figuring out BTUs vs sft.

So- I offered to help out a friend of a friend who moved into a new place and found out the day she moved the new place might have bedbugs. She has two cats who can't be in the apartment for 2 weeks because of the spray they use and I -stup[id me0 offer to help her out. Now this entail raarranging my place to bring up the huge cat cage, caring for them while trying to not have my cats freak out. we emailed, I gave her my phone number, she said she would call in the morning to talk over details. Zilch. Nada. I called and left a message at 11:30 or so asking her to met me know what's up. Nothing yet and it is now 5:30.
So I've waited around the entire day, rearranged my place and this person can't give me the courtesy of a call this morning? What to do? and the cats have to be bathed for bedbugs too- which I told her had to be done before they get here. So what should I do? I am royally annoyed.

bxgrl - That's horrendous! Sounds as if your friend must work as scheduler for Time/Warner cable or Nat'l Grid. appts. Awful to think you should shaft her since then what happens to the kitties. But you've already done so much, maybe just wait it out & you'll find out she's been stuck in a subway or something & couldn't get cell service.

Yes, definitely, you're the one getting done. I just feel bad for the kitties. Maybe we can hope that she decided not to have the de-bugging done & she gets them.

Actually, a lot of Westerners think that Cantonese sounds combative.
My Cantonese herbalist from Guangzhou taught me how to "spot" Fukienese language. She explains: "if you hear someone speaking Chinese language, and you don't understand one single word they're saying...that's Fukienese."
Oh, and rf, I tell people that the difference between Mandarin and Cantonese is like the difference between German and Italian.

WIT, IF YOU DO NOT have the cats yet just forget about it. Besides, if she is this irresponsible you have NO guarantee that she is bringing you cats that have been bathed for bedbugs already and you know what kind of problem that is going to be.
No matter how close a friend, I would not get involved in a bed bug situation. As explained a few weeks ago, I'd rather contract a venereal disease.

I never heard from her. She was supposed to call me in the morning and drop them off today because the exterminator was spraying today. So basically I wasted the whole day waiting around, and spent several hours rearranging stuff to make space for the cat cage. Ah well, maybe its for the best- its just that she made it sound like this big urgent need to get them out today. (sorry to disappoint you, denton. The bedbugs haven't happened yet :-)
I'm taking your advice, dave.
