A new sit-down restaurant, The Blue Roost, is opening on Tuesday in at 539 Flatbush Avenue in Prospect-Lefferts Garden, at the intersection of Flatbush and Lincoln. The comfort food spot is a joint venture between neighborhood resident Linda Billings, a long-time bartender at Enduro’s and the caterer behind its cupcakes, and Billy Clark, whose partner is a well-loved dog walker in the neighborhood and also formerly a bartender at Enduro’s. Clark said the two had talked about opening a restaurant for a long time, and chose PLG because they have so many friends in the neighborhood. In fact, many of them donated chairs, lighting fixtures, mirrors and money to help the 19-seat restaurant open on a meager $30,000 budget. Hours are generally from 7am until 11 pm and Clark said it’s BYOB until they are able to get their beer and wine license.
